Ingredients
1.5 lbs top sirloin steak (cut into 1-inch cubes)
1 lb baby yellow potatoes (diced)
4 tbsp unsalted butter
4 garlic cloves (minced)
1 tbsp olive oil
1 tsp fresh thyme and rosemary
Salt & freshly ground black pepper
Instructions
Parboil diced potatoes for 5 minutes; drain well.
Sear potatoes in olive oil over medium-high heat until golden brown and tender. Remove.
Sear steak cubes in the hot skillet for 3-4 minutes until nicely browned on all sides.
Return potatoes to skillet with butter, minced garlic, thyme, and rosemary.
Toss continuously for 2 minutes to coat in bubbling garlic butter. Serve hot.
