1 cup shredded cooked chicken
1/2 cup sweet yellow corn
1 cup shredded Monterey Jack and cheddar
1/2 tsp taco seasoning
Sour cream & salsa for dipping
Instructions
Toss shredded chicken with corn and taco seasoning.
Place one tortilla on a buttered griddle over medium heat.
Scatter cheese over half the tortilla, add seasoned chicken and corn, top with more cheese.
Fold over into a half-moon shape.
Cook 3-4 minutes per side until golden brown and cheese is completely melted.
